4 grouper fillets
1 cup flour
1 cup bread crumbs
1 egg, beaten w/ 1 T. water
Salt & pepper, to taste
4 slices of Swiss cheese

Season each fillet with salt and pepper to taste. Dip each fillet into the flour and coat well on both sides. Dredge the floured fillets into the egg mixture and then dredge into the bread crumbs. Arrange onto a plate and chill in the refrigerator for about 20 minutes.

In a 10-12 inch skillet over medium heat, heat cooking oil. Fry fillets for 3-4 minutes on each side. Remove to a paper lined platter. Spray an oven-proof pan big enough to accommodate all four fillets. Place fillets in pan and top with a slice of Swiss cheese. Bake in a preheated 400 degree oven until the cheese just melts.
