Party Size Batch of Lee & Sunnie's Tasty Conch Fritters
1 1/2 Red peppers
1 1/2 Green peppers
3 Large onions
Mince & drain *VERY* well.
24 oz ground conch
3/4 cup flour
1/4 cup cracker meal
1 tbls Red pepper powder
3 tbls Old Bay Seasoning
After draining onions and peppers very well, mix with all of the dry
ingredients.
Moisten hands and roll into "ping-pong" size balls, fry until golden brown.
yields = 30-36 fritters
For a smaller batch use this ratio flour to cracker meal 3-1
* the onions & peppers must be drained well for best results*
For a tasty dipping sauce use this recipe or the cocktail sauce of your
choice.
1/2 mayonnaise 1/2 Guilden's Spicy Brown Mustard & just enough lemon/lime
juice to smooth the mixture to desired consistency.
