ISLAND CHICKEN
6-8 Chicken Thighs
1/2 cup Key Lime Juice
1/3 cup Soy Sauce
1 tablespoon Honey
4 Garlic Cloves, finely chopped
5 tablespoons Olive Oil
2 White Onions, diced
1 small can Pineapple Bits
1/4 cup Cashew Nuts (optional)
Salt to taste and cracked black pepper to taste.
Wash chicken thighs in cold water, dry with paper towels. Mix together Key Lime Juice, Soy Sauce, Honey, and Garlic. Marinate refrigerated overnight, or at least 8 hours in a Zip-Lock bag.
Remove chicken from marinate and dry. Set marinate aside. Heat a 10-12" frying pan and ad olive oil. When oil starts to shimmer add the chicken. Season with salt and pepper. Brown well on both sides on medium high, turning several times. When chicken is nicely browned reduce heat and add remaining marinate, pineapple, and onions. Bring to a boil, cover and simmer for approximately one hour or until done. Sprinkle cashew nuts before serving.
